When I make posole
May. 6th, 2016 10:18 pmWe are having dinner guests over tomorrow for New Mexican food. I couldn't find blue corn tortillas—didn't expect to—but I did find purple corn tortillas! So that should be interesting. Here is the game plan. Start out with some chips and salsa for starters. Posole (New Mexican pork and hominy) for the soup course. For mains we have the purple corn green chili chicken stacked (not rolled) enchiladas topped with optional fried egg to taste, with rice and beans, garnished with cilantro (coriander), sour cream and sliced avocado. Guests are bringing wine. I will let everyone know how it goes.
